Roasted coffee holds hundreds of aromatic compounds, and most of them are volatile — they leave. Grinding accelerates that escape enormously, which is why freshness is the single biggest lever on taste.

Grinding multiplies surface area

A whole bean exposes a small surface to air. Grinding it turns that bean into thousands of particles with vastly more surface, so oxidation that would take weeks now happens in days. Aroma goes first, then sweetness, and dull bitterness is what remains.
